8 T vegan margarine spread - (I have made these with 6 T white bean substitute and 2 T butter substitute and WILL try this with all beans shortly and will let you know how it goes - but they are DELICIOUS this way!) (I have now made them completely with beans and they rock!)
1 c.packed light brown sugar
1/2 c. granulated sugar
1 egg substitute (I use ener-g egg replacer) or use 2 egg whites or egg beaters
1 t. vanilla
2 1/2 c. all purpose flour
1/2 t. each: baking soda, salt
1/3 c. soy milks
1/2 package of vegan chocolate chips
Beat margarine/beans and sugars in medium bowl until fluffy; beat in egg substitute and vanilla. Mix in combined flour, baking soda, and salt alternately with milk, beginning ending with dry ingredients. Mix in chocolate. Drop cookies by tablespoonfuls onto greased pan or silicone cooking sheet. Bake at 375 degrees until browned, about 10 minutes. Cool on wire racks. SOOOOO super chewy and yummy! I usually make a double batch to give to friends!
