Butter Replacement! Read this!!!!

Ok, so even though I love to eat super healthy I do like to make treats and muffins sometimes - and now I have found a way to feel guilt free when making and eating these goodies! So, here is the secret - white beans! I was sceptical at first but I made banana bread (I will post that recipe soon) and the homemade brownies that are posted and you cannot tell a difference! Tastes moist and awesome. So I cooked up some all day in my crock pot (I honestly don't know how long they were in there because I kind of forgot about them) but you basically want to cook them til they are really soft and then either blend them in a bleder (and drain them before this by the way) or a food processor or even use a hand mixer. Then the best thing to do is freeze them in cup size amounts. The beans are pound for pound. So if a recipe calls for 3 T of butter, switch that out for 3 T of white beans. I know it sounds weird but I promise you can't tell! (Minus maybe being a bit more gassy after eating cookies than usual - teehee). I haven't tried this in cookies yet, but I bet basically anything flour based like cakes, cookies, bread etc and I will post how it goes in cookies! Let me know if you try this! It works great. :)

we've used white beans as a fat substitute in pretty much everything! my mom has started just grinding white beans into bean flour/powder, and adding that + water. it's amazing!
