Mediterranean Veggie Burgers - My Version

Ok, so I ALWAYS want to try new recipes and am missing half of what the recipe calls for. This happened with the Med Veg Burgers. So this is what I had and how I made them. Probably way easier too. :)

1 c. Orzo pasta
1 1/2 c. water
1 large onion, chopped
3-4 T. Oil Packed Sun Dried Tomatoes
1/4 c. Canned Artichoke Hearts
1 medium onion chopped
2-4 t. Minced Garlic
Olive Oil - about 3-4 T.
2 c Steamed Broccoli
1-2 T. Dried Basil
Salt and Pepper to taste
Bread Crumbs (probably about 1-2 c.)

As you can see, I didn't measure a whole lot of this. So just eye ball it.

I started by boiling the water and cooking to orzo pasta and steaming the broccoli. In the mean time in a big pan I dumped some olive oil in it and sauteed up the sun dried tomatoes, onions, artichoke hearts, and garlic. I then added basil when the onions were getting translucent and soft. Then I dumped all of that in my VitaMix blender and blended it all up until it was a nice smooth consistency (I also added in some salt and pepper while it was blending) then dumped it into a bowl and mixed in bread crumbs until it was in a more moldable consistency. I then formed them into patties, dipped each side in bread crumbs, then cooked them in a pan with some olive oil spray until they were crispy.

I served them on whole wheat buns with Veganaise (vegan mayonnaise) and lettuce and avocado! They were delish! Again, a lot of this way eye balled, I will try to make them again and get more accurate measurements but they were SO good!
