1 1/2 c. cooked dried, or drained, canned garbanzo beans, coarsely pureed
1/4 c. finely chopped parsley (dried is ok too)
2 T. chopped onion
2 cloves garlic, minced
1-2 T. lemon juice
1/4 c. all purpose flour
1 1/4 t. ground cumin
Salt and pepper to taste
2 pita breads and yogurt sauce
Suggested toppings: chopped tomatoes, cucumbers, green onions
1. Mix garbanzo beans, parsley, onion, garlic, lemon juice, flour, and cumin in bowl; season to taste with salt and pepper.
2. Shape mixture into 4 burgers (or shaped into meatballs, coated in bread crumbs, and baked at 375 degrees for 15 minutes and served in the pitas) and cook in lightly greased skillet until brown - 3 to 4 minutes on each side. Arrange burgers or meatballs in pitas, drizzle cucumber sauce and spoon on toppings.
