1 c veggie broth
1 32 oz can of diced tomatoes
2 T veganaise (vegan mayonnaise) or light/fat free miracle whip
1/2 T sugar
Basil (about 2 T)
Oregano (about 1 T)
Crushed Black Pepper - to taste
Garlic Powder
Salt
Place the tomatoes, broth, and veganaise into a blender. Blend until mixed but still a little chunky. Pour into a large pot (I always double this and so i do 2 batched in the blender) and simmer for 20-30 min. The soup should get darker red as you cook it. While simmering add sugar and seasonings. The above amounts are me guessing. I usually just add whatever I want to the soup and continue tasting it. So don't be scared to improvise and add other things that sound good to you! A great topping for this is a little bit of low fat mozzarella cheese or parmesan cheese.
